Serves 18




  • Preheat oven to 190 degrees C
  • Stir passata, chopped tomatoes and rice together in a baking dish
  • Place chicken on top
  • Sprinkle chicken with Italian seasoning
  • Cover baking dish tightly with foil (top tip: this is to make sure none of the steam can escape. You want your rice to absorb the liquid
  • Bake for 50 minutes or until chicken is cooked through
  • Remove foil and add mozzarella cheese
  • Place back in oven (uncovered) for 5 minutes or until cheese is melted
  • Sprinkle with fresh basil to serve
